If you’re out and about and had a long, hard day, the last thing you want to do is cook a large family meal. This tasty recipe can be quickly thrown together and chucked into the slow cooker with minimum fuss. Serve it with fluffy couscous and steamed veggies, and wait for the compliments to flow.

Cooking time: Approx 6:30 hrs
Serves 6.
INGREDIENTS:
- 1 kg boned chicken thighs roughly chopped
- 2 onions diced
- 425 g can diced tomatoes
- 4 cups butternut pumpkin diced
- 425 g can chickpeas rinsed
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp ground cinnamon
- 1 tsp salt
- 1 tsp ground black pepper
- 3 garlic cloves minced
- 1 tbsp tomato paste
- 1 tbsp lemon rind grated
- 1/2 cup Chicken Stock
- 1/4 cup coriander finely chopped
- 3 tbsp lemon juice
- 1/3 cup sultanas
METHOD:
- Place all the ingredients, except the lemon juice and sultanas, in the slow cooker. Stir to combine.
- Cook on low for 6 hours or on high for 3 hours.
- Stir in the lemon juice and sultanas and heat for 15-30 minutes.
