Spiced Turkey Meatballs

Sometimes, on those cold winter days, you just don’t feel like cooking when you come home from work. Here’s a fabulous take on meatballs that you can whack in the slow cooker so that it’s ready to go when you get home. And the best part is that it’s made with lean Turkey Breast mince, so it’s super low on calories.

 

Preparation: 15 mins

Cooking time: Approx 30 mins

Serves 8


INGREDIENTS:

  • Canned diced Tomatoes (2 × 400g cans)
  • 1/3 cup(s) (90 grams) Tomato Paste
  • 2 tbsp Balsamic Vinegar
  • 3 tsp dried Oregano
  • ¼ tsp dried Chilli Flakes
  • 1 kg Turkey Breast Mince
  •  ½ cup(s) (70g) Panko or other breadcrumbs
  • 2 tbsp dried Basil
  • 1 tsp Fennel Seeds crushed

 

METHOD:

  1. Combine canned tomatoes, tomato paste, vinegar, 2 teaspoons oregano and chilli flakes in a 4.5 litre (18-cup) slow cooker. Season with salt and pepper.
  2. Combine turkey mince, breadcrumbs, basil, fennel seeds and remaining oregano in a medium bowl. Season with salt and pepper. Shape the mixture into 24 meatballs. Add to slow cooker. Cook, covered, on low for 7 hours or until meatballs are cooked through.

Note: Add 120 grams of baby spinach at the end of cooking for an additional veggie hit. You can serve this with the pasta of your choice, on a bed of rice, or even go super healthy and use zucchini or carrot noodles.
