During one of our many Christmas functions, someone bought these cheeky numbers along as a little appetiser and blew us all away.
So simple to prepare and absolutely packed with flavour, these gluten-free ribs can be eaten as finger food with a drink, or you could just cook up a whole mess for your next movie night.
Preparation time: 5 mins
Cooking time: 30 mins
Serves: 16
INGREDIENTS:
- 4 x fresh corn on cob (husks removed)
- 2 tbs olive oil
- 1 x tsp paprika smoked
- 1 x tsp garlic powder
- 1 x tsp salt
- ½ x tsp pepper
METHOD:
- Split each corn lengthways into quarters so that you end up with 16 ribs. Take extra care because the corn can be hard to split.
- Combine oil with all dry ingredients and paint over the ribs
- Put onto a lined baking tray and bake for approx. 30 mins
- Serve warm with chipotle mayo for dipping.
