Slow Cooker Chicken Cacciatore

After a long day in the office or just a hectic day out and about, the last thing you want to do is cook an elaborate meal. This is scrummy recipe for Chicken Cacciatore in the slow cooker lets you come home to a beautiful aroma of this Italian staple that ready to go. As well as being quick to make, our recipe is a flavourful dish that’s also low in fat, making it a great choice for anyone looking to maintain a healthy diet.

Preparation time: Around 20 mins
Cooking time: 6-8 hours on low or 4-5 hours on high
Serves: 4


INGREDIENTS:

  • 4 x boneless, skinless chicken breasts
  • 1 x medium onion, chopped
  • 2 x capsicums (any colour), sliced
  • 2 x cloves garlic, minced
  • 1 x 410g can of diced tomatoes
  • 1 x cup chicken stock
  • 2 x tbsp tomato paste
  • 1 x tbsp dried basil
  • 1 x tsp dried oregano
  • 1/2 x tsp chilli flakes
  • Salt and pepper, to taste
  • 1/4 x cup freshly chopped parsley

Method:

  1. In a slow cooker, add the chicken breasts, onion, capsicums, garlic, diced tomatoes, stock, tomato paste, basil, oregano, chilli flakes, salt, and pepper.
  2. Stir until everything is combined and the chicken is coated in the sauce.
  3. Cover the slow cooker and cook on low heat for 6-8 hours (or high for 4-5 hours).
  4. Once the chicken is cooked through, remove it from the slow cooker and shred it into pieces.
  5. Return the shredded chicken to the slow cooker and stir it into the sauce.
  6. Serve the Chicken Cacciatore over pasta or rice, topped with freshly chopped parsley. You can even add some green beans or broccoli as a side dish. Enjoy!
